About

The Castle Ward estate provides a varied selection of edible options from woodland to shore. During your foraging experience Clare will demonstrate how to safely and confidently identify unique edible coastal plants, fruits, trees and fungi and share exciting ways to use these in your cooking. You’ll learn what to pick and when, as well as how to preserve and prepare it.

Your guided tour of the estate grounds takes you along forest paths and the coastline of the lough. As you walk, Clare will point out various plants and fungi that you can sample on the spot. You’ll discover all sorts of delicious and nutritious natural ""snacks"". Everything you try will be inspired directly by the season and bounty of Castle Ward. 

You’ll also learn how the undisturbed soils on parts of the estate contribute to the establishment of plants and fungi. Clare will discuss the importance and beauty of these old woodlands and the things that can be can gathered from them. She’ll also talk about food and foraging back when Old Castle Ward being built and how wild ingredients are an important part of our food history.

Finally the event will conclude with a delicious feast that Clare will prepare using the foraged ingredients found on the walk, as well as some special and unique flavours from Clare's seasonal stores. In an age when we're all trying to be more eco-friendly, this has to be one of the best ways of making it happen. Totally sustainable and delicious treats await. Enjoy!
